A great beef brisket recipe for Father’s Day
If you’re looking for a great way to honor your dad this Father’s Day, why not start with a great meal? Although dads may seem harder to buy gifts for than moms, you can help to make great memories by giving your father something he’ll truly enjoy. Before we get to this great beef brisket recipe, it’s perhaps best to stop and think a bit about the importance of this holiday.
A word on Father’s Day
Father’s Day is a unique holiday. Situated in the early summer, it’s far removed from most of the traditional gift-giving days. It is, however, rather close on the calendar to Mother’s Day. The latter holiday gets a lot of press, and deservedly so, for being one of the more important mid-year celebrations. Families flock to familiar restaurants to celebrate and florists tend to do a great deal of their yearly business in the lead-up to the holiday. By comparison, Father’s Day is a relatively quiet affair.
That does not, however, mean that Father’s Day is an unimportant holiday. It’s one of the few days of the year where families are invited to directly express their affection to the person who is often the unsung hero of the family. For fathers around the country, this holiday has become a day on which their families express their appreciation.
Instead of buying dad something that might wind up collecting dust in the garage or the closet, more families are choosing to create memorable experiences instead of gift giving. In some cases, this means going to play a round of golf at a great country club, but others might find that the best way to show appreciation is by making a great meal for that special dad. Fortunately, Blackstone Country Club is home to one of the most talented chefs in the area. Our own Executive Chef Steven Duarte happily shares his favorite beef brisket recipe so you can give Dad a feast he won’t forget.
Introducing Chef Duarte
Steven Duarte is a fixture at Blackstone Country Club, helping to bring guests fantastic meals since 2012. He’s a regular in the area as well, having worked as Executive Chef at both Arrowhead and Firerock Country Clubs in the past. You could say that Chef Duarte’s long career in Arizona makes him perfectly suited to making meals that exceed expectations, precisely because he knows the importance of finding ingredients that are fresh and in season. With over twenty years in the restaurant business and experience in virtually every major role, Chef Duarte runs an efficient kitchen that excels in bringing the most flavorful and fresh dishes to Club members.
Before you begin this recipe, you’ll want to gather the ingredients for both parts. For the brisket itself, you’ll need the following:
3/4 cup of Ground Black Pepper
3/4 cup of Paprika
1/4 cup of Kosher or Sea Salt
1/4 cup of Granulated Sugar
2 tablespoons of Onion Powder
2 tablespoons of Garlic Powder
2 tablespoons of Chili Powder
2 teaspoons of Cayenne Powder
8-12 pounds of Beef Brisket
In addition to the brisket, you’ll need to make a ‘beer mop’ with which you can baste the meat. For the mop, you’ll need:
1 12oz Beer
1/2 cup Vegetable Oil
1/2 cup Cider Vinegar
1/2 Chopped Onion
2 Minced Garlic Cloves
1 Tablespoon Dry Rub
1 Tablespoon Worcestershire Sauce
Preparation for this meal should begin the night before. Combine all of the spices and seasonings for the first part in a bowl and then massage it into the brisket. Set aside one teaspoon of this dry rub, as you’ll need it for the beer mop the next day. Once you’re done, place the brisket in a sealed plastic bag and refrigerate overnight.
The next day, you’ll need to get your smoker ready to cook. While you do that, take the brisket out and let it stand for at least four minutes before cooking. Once the smoker reaches about 200 degrees, you’ll want to start working on the mop. Combine all the ingredients with about half a cup of water and warm it up over low heat. Take the brisket and place it fat-side up on the coolest part of your smoker. You’ll want to cook the meat for about an hour and a half per pound, basting it hourly with the beer mop. When you’re done, let the meat rest for about half an hour before serving.
